If you’re in the mood for something more than the usual with your barbecue chicken, here are some unique recipes you definitely must try:
Creamy Tangy Barbecue Chicken
What you need:
- 2 3/4 kg. whole chicken, cut into 8 pieces
- 1 cup plain low-fat Greek yogurt, divided
- 4 cloves garlic, crushed
- 1/2 lemon, juiced
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon olive oil
- 1 tablespoon paprika
- 1 teaspoon harissa
- 1 teaspoon herbes de Provence
- 1 teaspoon salt, plus more to taste
- 1 teaspoon ground black pepper
In a medium bowl, whisk together 1/2 cup Greek yogurt, juice from 1/2 lemon, garlic, lemon zest, olive oil, paprika, herbes de Provence, pepper and 1 teaspoon salt. Mix until all ingredients are well-combined. Pour mixture in a large re-sealable plastic bag and place chicken inside. Coat chicken with marinade, seal and refrigerate for 3-5 hours. In a separate bowl, combine remaining yogurt, 1 tablespoon lemon juice and harissa. Set aside. When chicken is ready, remove from bag and discard excess marinade. Place chicken on a plate, pat dry with paper towels then season with a pinch of salt. Cook in a pre-heated grill over medium high heat until cooked through, turning once, about 20-25 minutes. Serve grilled chicken with a side of the yogurt-harissa sauce.
Peaches and Wings
What you need:
- 8-10 pieces chicken wings
- 4 ripe peaches, halved and pitted
- 2 cups peach preserves
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon finely chopped garlic
- 1 pinch salt
- Ground black pepper to taste
In a medium bowl, mix together peach preserves, olive oil, garlic and Dijon mustard. Reserve 1/2 cup of the mixture then set aside. Season chicken wings with salt and pepper then cook on a pre-heated grill over medium high heat until golden brown, about 5-6 minutes. Flip the wings and cook for 5-6 minutes more. Brush wings with peach sauce and continue to grill until cooked through. Arrange peach slices on the grill, cut side down, and grill for 2 minutes. Flip, brush with peach sauce, then continue to cook until tender. Serve wings and grilled peaches immediately.
Grilled Bacon-Wrapped Rosemary Chicken
What you need:
- 4 boneless and skinless chicken breast halves
- 4 thick slices bacon
- 4 sprigs rosemary
- 4 teaspoons garlic powder
- Salt and ground black pepper to taste
Sprinkle chicken breasts with 1 teaspoon of garlic each then season with salt and pepper. Place a rosemary sprig on each breast then wrap with bacon. Secure with a toothpick. Cook chicken breasts on a pre-heated grill over medium-high heat until cooked through, about 8 minutes per side. Remove toothpicks before serving.
